Peruvian food, one of the most successful cuisines in the world, confirmed that it is not just a fad. In the latest ranking of the magazine "Restaurant", New York, London, Mexico City and Lima are cities that can boast of having three locations among 50 best restaurants in the world. Peruvian capital is the only one that has two gastronomic redoubts among 15 on the planet. 

 Lima, as a city of wide tradition and culture, has an exquisite and varied gastronomy, and have been named as the gastronomic capital of South America due to its unmistakable and unparalleled culinary contribution both pre-Hispanic and colonial as well as different influences of Eastern and Western . This recognition as gastronomic capital makes it an important international destination for lovers of good food.

Peruvian ceviche has transcended borders around the world and has even reached international media, such as CNN news channel, where today the recipe of this traditional dish was published by the chef Mitsuharu Tsumura, from nikkei restaurant, Maido.

Directions to prepare this special Ceviche recipe can be seen at a  video posted on Facebook with all steps to prepare this delicious dish in the style of chef Micha and you can enjoy it this summer.

Ingredients of ceviche Nissei:

White fish (preferably cabrilla)
Pejerrey
Fan Shells
Limpet
Chili pepper
Tiger milk (lemon juice, salt, hot pepper and cilantro)
Coriander
Red onion
Fish cracklings

Preparation of ceviche Nissei:

Mix the fish cut into cubes with chopped red pepper. Then, place fan shells,  silverside and  limpet previously cut.

With this mixture, place the tiger milk and mix quickly to prevent the fish from cooking. Place the red onion in strips.

Then put the preparation on a plate, and add the canchaita serrana together with the pork rind.

To prepare the fish crackling, you should cut the fish into strips, marinate with salt, pepper and garlic.

Finally, fish strips must be passed through egg and flour, and fry them with hot oil.
